cowboy beebop is just awesome although it has much less ecchi (if any, maybe you consider faye's usual wardrobe ecchi) than most of the others listed.

That's why everyone is telling you to watch the movies. The anime was a complete failure. If I recall correctly the manga was still ongoign when they completed it.
There's going to be a total of 4 movies that retell the anime story, properly. Only problem is only 2/4 are released so far.

Think of the anime as windows vista and the movies as windows 7, same deal.
