I tweaked around a bit with this recipe at my Mom's request and it turned out pretty damn good, so I thought I might share it. I'm using Krusteaz's Crumb Cake mix, but I'm sure any sort of Crumb Cake/Strudel mix (Apple or Cinnamon) will do.
Ingredients:
(The top two ingredients will vary depending on what mix you're using)
2/3rd cup of water
1 Egg
An Apple of your choice, cut into small pieces/cubes
Finely chopped walnuts (optional)
2~3 tbspn butter
Extra butter or cooking spray to grease the pan
Tools
A mixing bowl
A small sauce pan
A mixing spoon or wisk
A knife/spoon to spread the dough (optional)
A small baking pan (something around 9x9inchs is ideal)
First, pre-heat the oven to 350°. Mix the primary ingredients into the dough, then open the package of cinnamon topping and add roughly 1/3rd or a few spoon fulls of it into the dough. Mix well.
Second, grease the bottom and edges of the pan well before adding in 2/3rds of the dough mixture.
Third, let the butter melt over medium heat and stir in the nuts, chopped apple pieces and 1/3rd to 2/3rds of the cinnamon topping. Stir them together well and let them cook for 2-3 minutes until the sauce thickens slightly and all the ingredients are well combined.
Fourth, pour the apple/cinnamon/nut mixture onto the dough evenly. Next, add the remaining 1/3rd of the dough mixture on-top. You do not have to swirl or try and even out the mixture, it WILL bake fine it you just add spoon fulls on-top. It's up to you if you want to swirl the top layer of dough for appearance purposes.
Fifth, bake the cake for 20-45 minutes, making sure to check on it every 5 minutes until it is done. Some ovens will cook this cake VERY quickly, while others may take longer. So don't forget to check on it often. Once a tooth pick or a knife comes out clean from the center of the cake, let it cool for 10-15 minutes or until it's cooled down enough to cut and serve.
Notes: You can use any remaining cinnamon topping and add some butter to make some caramel to spread on-top of it, but I find that it's perfectly fine without it. Having leftover cinnamon topping is normal.
I think walnuts give it a nice crunch and blend well with the other flavors, but you're welcome to try other kinds or use none at all.
