I myself have a hat collection, I just bought a new one yesterday.

I collect dust. :D
My mom collects salt & pepper shakers, and she also collects nutcrackers (the Christmas kind, not the actual tools for cracking nuts).
I used to collect stamps when I was like 10, but I gave up on that when I was like 12. Now I collect...nothing, actually. :(

I'm a camera collector kinda.
I have a few Films and Polaroids...mainly from cleaning out my grandmothers basement. My uncle would have thrown them away otherwise -___-
Currently i have a Nikon D80 that i use a lot and a film camera that my grandma gave me.
