imo, the whole third episode. Which means Boat 3, Evie, more levels, twin lances / hammer. But probably not Scythes.

They can't really call it an open beta unless it's actually open to the masses. As such I don't think there's going to be any server downtime between the early access open beta and the normal one.

That being said, I think the content coming at that time won't be a surprise...some level, some boat, some character.
