YES, OVEN FRIED CHICKEN!
BUT THAT'S NOT POSSIBLE!- Or is it?

A crunchy, juicy, delicious, and healthier alternative to fried chicken.

INGREDIENTS
10-12 organic chicken wings
2 cups whole wheat flour
1 tablespoon sea salt
1 tablespoon onion powder
1 tablespoon paprika
1/2 tablespoon garlic powder
1/2 tablespoon seasoning salt
1/2 tablespoon ground pepper
1/2 tablespoon chili powder
1 can olive oil spray

DIRECTIONS
‣ Pre heat oven at 400 degrees. If you have a “convection bake” setting, use it.
‣ Rinse the chicken wings and pat dry.
‣ Combine wings with spices: sea salt, onion powder, paprika, garlic powder, seasoning salt, ground pepper and chili powder.
‣ Mix together in a large bowl and set aside.
‣ Cover a large flat oven pan with heavy duty foil (this eliminates the need to scrub the pan clean when done).
‣ Spray a layer of olive oil on the foil.
‣ Be sure to cover the entire surface with spray.
‣ Next, put the flour in a a clean paper bag (or you can use a large bowl. I like to keep as simple as possible!)
‣ Add half of the seasoning chicken wings, roll the top of the bag closed and shake it up until the chicken is fully cover in a thin layer of flour.
‣ Take the chicken out of the bag and lay down flat on the bag. Repeat with remaining pieces of chicken.Throw the paper bag away.
‣ Once you have all of the chicken laying flat on the pan, spray olive oil over the top of the chicken. Be sure to cover each piece of chicken. The olive oil is what causes the chicken to fry and become crispy in the oven.
‣ Place your pan in the hot oven for 40 min.
‣ Remove the pan and flip chicken over and return to oven for 10-15 minutes or until it is as crispy as your prefer.
‣ Remove the chicken from the oven and sprinkle with a little sea salt and pepper OR seasoning salt as a finishing touch.
‣ Let chicken sit for 5 minutes, then serve!

I know its a bit late since the holiday was yesterday, but I had some potatoes that needed eating before I made any more food so this dinner was...

I know its a bit late since the holiday was yesterday, but I had some potatoes that needed eating before I made any more food so this dinner was delayed to today.

I'm not Mexican, but I love Mexicans and Mexican culture (I'm looking at you, Christian!), so I decided to participate in this little celebration. I'm not sure what its about, but they seem to eat good food. I don't know what Mexicans eat, but from my experience in dining out, I vaguely recall throwing together some gratuitous fancy burritos and giving it really weird names, so I figured I'd try that.

I used beef skirts, refried beans, some rice with tomatoes and peppers, mashed avocados (I don't quite know how to make guacamole nor do I care to find out that I don't have the recipes for it), some tortillas, and cheese (mozzerella, the wrong kind). I also fried onions and bell peppers in the beef grease.

Looks nice, and looks good. The total ingredients cost me about 12 dollars and I only used about a third of it all, so this whole mean ran me only about 4 dollars. Don't mind the chopsticks. Its what I use to cook/eat everything. Because I'm Asian.

Now I don't actually know how Mexicans eat these, so I just went the simple way and threw it all together on the tortilla. I figured there would be no problems there.

Still, I was missing something... something important.

Since it was Cinco de Mayo, I figured I'd need a bit of mayo. I had to pick between Olive mayo and Bacon mayo, and I decided that olive is probably a better choice.

But I really can't remember if it was supposed to be five grams or ounces. I asked Elena a little bit ago but I had difficulty recalling her answer. I was already in the kitchen, and going back to the computer to do research on the holiday or digging through the skype chat history seemed too much of a bother, so I just guessed at 5 teaspoons.

And then I (poorly) wrapped it. And ate it. With coca cola. I always imagined Mexicans like coca cola. Every glass bottle of coca cola I've ever had was made in Mexico.

Verdict:

The tortilla broke apart pretty fast. I had to use a fork to eat it. Also, one burrito was actually big enough for me, so I didn't even eat half the food I cooked. Scratch what I said earlier about this meal being 4 dollars. It was more like 2. I'm not sure if I just poorly wrapped it, or maybe the tortilla holds better if I actually toast it a bit, or maybe I overstuffed it. All I know for sure is that I'll never be able to work at a Mexican restaurant.

Also, the mayo kinda ruined it for me. I had my doubts, but I figured southerners really understood food and knew what they were doing. If I had to guess, it was probably due to some age old tradition that they can't get over. I won't be celebrating this holiday again, or at least without the mayo next time.

Dragon Berry Smoothie

(What? Ya think this name is just for show?!)

'Sup so I'm like a smoothie fanatic and since it's no longer an icehell outside I finally have access to fresh produce which means smoothie saturdays are back!
Ah~
But enough of my ramblings, I don't take exact measurements of what I put in because I only have a small single serving blender so you'll have to eyeball everything yourself.

What you need:

Blender

Plain soy milk

Lemon sherbert

Dragon fruit

Raspberries

Strawberries

Banana

Now the general ratio of the fruit should be:
Dragon fruit > Strawberry > Raspberry > Banana

You should only use a small splash of soy milk (just enough to aid in blending) and a few scoops of lemon sherbert (it should be lemon! it compliments the other fruits in the smoothie and makes them a bit sweeter) then blend it all up!

Be a dork and make your glass look all fancy and enjoy!
