Haha, I was the same way! I love V.A.T.S.! So much fun!
And ah, yeah that's why. There are tons of mods out for the PC version that can literally change the whole game.

Because you can't always use it, at least not in New Vegas. Things get messy sometimes and even if you spec for it and have excellent weapons, there won't always be enough points. And sometimes, there are weird situations where it isn't viable. If something's really close to you, it could miss completely. If something is moving, it only shows the % of hitting in that still frame. By the time you start shooting, it'll often change and you may even have a 0% chance of hitting in some cases. There's even times where something is really tough and you can't take it down in one go. So what do you do in the meantime? Wait for it to go back up while running around? Stuff like that.
Iron sights wouldn't help much, really. I mean, there's still a crosshair and all that.

I only liked VATS for when you're in a small space and surrounded on every side, then it's actually fun.
But for 1 on 1 or playing as a sneak/sniper VATS either made it too boring or didn't even work (can hit things many times farther away without VATS when using a sniper).

I never used VATS, it's fucking lame. Makes the game too easy and boring.
There's mods to disable it too, but that's just for people that can't resist pressing V.

I wouldn't go so far as to call it lame since it lets you do some cool things in certain situations, although I wish it would slow down time instead of pausing (I never bothered to check if there was a mod for this though). If you had to be quick about choosing your targets, and be vulnerable while you're shooting instead of semi-invincible it would be great.

There are mods just for that.
Good alternative to not using it I guess. By default being in VATS reduces damage by a ridiculous amount, I don't remember the exact percentages, but yeah, there's a mod that removes that damage reduction and changes how fast time goes when in VATS.

Meh, I didn't play Fallout 3 for challenging FPS action. I played it to blow people's heads of in slow motion. (And for the exploration/story)

Vats was never useful unless you a mob was nearby
for small groups 3 or less
a assult rifle with good aiming did the job

New Vegas nerfed V.A.T.S. quite a bit, but at least it has true iron sights to make up for it.
