Some minor stat growths, mostly of the Will variety, meaning more crits. You can earn some decent money if you live on the fishing boat. Things like Abysmal ES and formerly the Red/Black Leather Long Bow are pretty effective of getting some quick cash if you're lucky. However, unless you do get lucky, you'll make a very small profit if you sell all the crap you picked up and buy replacement rods and bait.
So really, it's more of a bottom tier priority on most people's skill lists, where people only raise it for the minor stat boosts, or for fishing events like this, since they can collect more things quickly with high ranked Fishing.

Anyways, someone said that you can get those seals of enjoyments to buy those fine potions in those shops from fishing though.

Haha xD Also those seals of enjoyment can be traded in for Silver Tokensss! But I think the exchange rate for them is worse than that of Dedication =( 40 for dedication, 60 (or 80? I've read varying things about it) for Enjoyment =( Maybe this means it's easier to get the Enjoyment seals?! 8D

You get items from chests, and I think there's a purpose to actually catching the fishes, because I see people beat up the boated fish and then harvest it.
