Recently got through the questline here, and I thought I'd do some dissecting of the boss AI. I find this boss to be the most annoying by far, but I think I've figured out some good ways to deal with it.
In general, rushing after the monster and using your sprint smash whenever you can goes a long way. A smash is a smash, and I've been able to daze both the werewolves and the boss by doing this on both Lann and Fiona.
So far, a good party strategy is to let the columns break and repeatedly toss the boulder fragments at the mobs, as they have a high stun chance. However, I'm the kind of player that likes to figure out what you can do without items, so here are my thoughts:
For Lann, I have discovered that if you find the right range for the werewolf dash attack, you can slipdash backwards through the last bit of the attack, and then counter immediately with double crescent.
I haven't really experimented with spear-Lann yet, but I theorize that you could try and be a little farther, and hit the werewolf with your dodge-attack as a counter, since that has a possibility to crit, which would lead to gliding fury. Otherwise, it's the same sprint-smash idea.
Sword Fionas will be able to easily get hits in, since they recover more quickly into Heavy Stander cancel. I haven't figured out a way to counter the wolf-dash though.
I prefer hammer Fiona, though. Basically, my Fiona-play boiled down to sprint-smash, and once I had them stunned, I could repeatedly re-stun them with combo #4 and some help from party members.

When I use fiona I just counter attack them.
With a party it is a bit more difficult since the wolves might target a party member instead and you have to run in front of them to counter it but if you could tell your party to let the wolves aggro to you then you can stun them pretty easily.

If you're only talking about the normal werewolves, then counterattack is all you need. 1 counter is all it takes to bring them down and they have no smash attacks. Black Breeze? Squall? Gale? <insert other wind-type thinger>? is another story because all he does is smash. What I tend to do for him is Heavy stand when he's tackling me. When he makes contact, it'll usually push me back, but he also follows through so he'll be right next to me giving me a chance to do a quick Blossom Blow.

When I solo these I try to make counter attacks against the Werewolves hit Black Breeze, once the werewolves die, which doesn't take long, it's easy with Black Breeze alone, you can easily blossom blow him after he does the jump attack, by running a bit backwards and learning how much he travels after the jump.
Also, after stunning Black Breeze, attack from the front, so when he recovers there's a higher chance he'll head-butt which is the only attack that can be countered.
