Okay so I have a Guardian bow that just recently became ego able. Its on a production character however, so the dex is there but sucky archery. (Plenty of room to increase it and I'm doing that as we speak.)
Anyway, should I ego it? and if so what gender? and is so then what food?

so what then upgrade it? and doesn't it have better stats?

In the beginning, a Guardian Bow has better stats. Later on though, the LLB will surpass it. Not to mention the LLB has much more range than the Guardian Bow.

People aren't thinking enough if they're completely disregarding Guardian Bow for LLB.
Boiling it down, the Guardian Bow Ego has higher damage than the Leather Long Bow Ego (for what's listed so far, 36 Str). Crit-wise, it falls short by around 7 on average. With the introduction of Crash Shot, damage may be sufficient enough to abandon stellar critical builds. Although the gem of Elf Range (imo) is Magnum Revolver, which does need the critical.
Guardian Bows do have two very large advantages though. All other bows will lose double durability on normal ranged attacks (2 arrows) but the Guardian Bow will only use one. In addition, the extremely high durability of stock Guardian Bows means that you can fully prof them to 100 without needing to repair them a single point. This makes ego repairs much more manageable.
Lastly, the Guardian Bow Ego only has 1900 range, which is almost 75% of the LLB's 2500. Depending on your style, this could be disadvantageous, however I think that Elf Range is best when used close-up, so I disregarded this. It's not like you can't carry a long range bow on secondary if you really need that extra distance.

The Guardian bow is used exclusively to conserve durability. It's not a bad weapon but I wouldn't ego it. The main reason being the lack of end-stat knowledge.
...but what the hell. Perhaps you could add that info to our wiki.
The Wing Bow is generally considered to be the best bow in the game with average damage, high critical, first-place range, fast speed and lengthy stun.
The Ring Bow has first-place damage, average critical, average range and first-place stun.
The Leather Long Bow has average damage, critical, range and stun.
The Crossbow should be considered Human-only. Average damage, First-place critical, average stun and improved mobility at the cost of range and campfire potential.
All of these weapons have very similar ADACT (xbox/llb - 147, wing - 149, ring - 151)

Justified brought up some valid points, enough to change my mind a little bit.
Don't count on my making a max level ego though my egos, usually die out at around social 25-35.
