Secondly, this is because, when iTunes plays a file, it uses the tags embedded in your files to recognise the correct format so, at that point, it will display the right information. However, it doesn't change the name of the actual file on your HDD. So, if you kept iTunes on forever without updating your library, iTunes would keep the correct formatting but, when you re-update your library, iTunes has to recatalogue all the original files &, at that point, it doesn't use the embedded tag data, it just references the actual file name as it is on your HDD & so it reverts back to displaying the wrong info.

Yes - well there are two ways. (Personally I don't like the first one but I'll tell you about it anyway)
The first is to let iTunes organise your music files - you may have seen this option in the iTunes preferences
You go to
Edit -> Preferences -> Advanced
& choose this option:

This will allow iTunes to rename your files on your HDD thus solving the problem that happens when you re-update and it has to recatalogue the files. The reason I don't like this is that, if you happen to add any music that isn't tagged properly, it won't be displayed properly & it could change the way some of your already added music is displayed - music that you already have organised the way you like it.
(&, as it sounds like you feel the same about your music collection as I do about mine, I doubt you would like this option either - still it is an option)
The second option is to use a program to rename your files yourself according to the embedded tags.

& I know exactly how you feel - my music collection is very important to me & I am extremely cautious about what I will & won't allow near it. Besides, when it comes to programs that claim to fix things, you are right to be careful - the ones you see advertising themselves everywhere online are usually the ones you should avoid like the plague!
Luckily though, as well as being obsessive about my music files, I am also a bit keen on finding good free software. I have spent many years researching and trying out all sorts of programs and have gathered an excellent collection of applications for almost every purpose & problem you could think of - including this one :D
So I highly recommend using TagScanner - it's a free software that I've used for many years and it allows you to do many things - rename your files according to the tags, edit the tags, generate tags from the filenames, look up the file info online and many many more functions. Everything you do can be previewed first to see what any changes would look like & everything can be undone. It is seriously worth taking a look at and, if you use it to rename your files based on the tag information, then re-update your iTunes library, the correct file info should be displayed permanently.
