So my friend Elizabeth talked her parents into letting me head to Anime North with them!

Now my automatic reaction was "HELL YEA!" but then it hit me that I'm not as big as an otaku as I was...
As a "casual otaku" would I still enjoy a convention with tons of anime/manga/crap that I really don't know or give a damn about?

I think that really depends on whether you let yourself or not. I don't think you have to be any sort of hardcore otaku to really enjoy anime conventions; just because you don't know everything about every series doesn't make the convention itself any less enjoyable. I think if you just enjoy the con for what it is and what you can see and the people you can meet, then you'll have a good time.
I must caution you though, that while there are lots of cool people at cons, there are just as many douches and jackasses too. Know that they are there, that they are jackasses, leave them to their jackassery, and you shall be fine I think. Oh and bring a good chunk of money. Things tend to me expensive at cons. >>

I think they're really interesting. There's the artist's alley to check out for some awesome original art, and plenty of interesting/impressive/horrifying cosplayers. Great for people watching :D

I went to AFA multiples of times in Asia
(Because I'm living in Asia and that's one of the few "bigger" conventions that they would invite anime CVs, like K-On voice actors over to do a stage performance.)

I don't understand why you guys are treating Otaku as a complement... Over here, otaku is an insult, one of the worst ones there is too, by the way.
It means you're a social reject, you're unwanted, unemployed, no one wants you, a N337/NEET. All you do is stay at home and fanboy crap people made.
In short, you're pathetic. That's what it means over here.
