My response:

During the great exploration of Uladh the Tuatha de Dannan came across a particularly rich ore deposit down south, now known as Bangor. It was already inhabited by the Kobolds, who taught us how to mine. As thanks, we held feasts, eating turkey and other festive... foods. Soon after, we relocated the native Kobolds to a reservation known as Reighinalt. There was resistance but they were no match for our superior weapons and skills. Since then the day was marked in the United Uladh calendar as "Thanksgiving", and we repeat the tradition of eating turkey and other festive foods. God bless the United Uladh.

It did happen, though probably without the part about the feast.

Bangor used to be a kobold town until humans came down and drove them out. Now they live in Reighinalt.

Reighinalt sounds cooler than bangor. At least the kobolds have a bit of win for themselves.
