I usually thought the Defense skill wouldn't cancel because the Advanced Heavy Stander would cancel out any knock back properties that can defeat Defense.
In any case... I've used that tactic before, with the aggro lure. Except the person didn't play dead, but rather put up Barrier Spikes (and then others put up more Barrier Spikes around him).
This is a possible theory.

As for elves with no alchemy, I don't know. I've always done it fine with myself windmilling or golems windmilling so yeah.
It's not glitching it into defence. The monster just uses defence and you have to just go right up there and smash it in time. I just see it as a handy tactic (not bug or glitch) and it doesn't really do any harm as long as you keep smashing.
I can definitely see someone soloing it through this way, getting a skeleton pet out and get it to play dead after boss notices it and then wait for it to go into defence mode and keep smashing over and over again.
Why use a risky method when there is a less risky alternative that doesn't do any harm to the game? Windmill method works, but it is not safe. I have seen countless of people dying because of failed timing. It's relatively safe for the golem-wielding alchemist with a barrier spikes wall, but it will be selfish to assume that it is safe for everyone. Even with people following instructions there is this slight chance they might still die without reason (I'm not kidding here, I followed what everyone did for windmilling countless of times but I have died numerous times even when it seems to work out well). And it will be followed by a domino effect. One person dies, the rest will usually die 50% of the time. Whereas for the defence method, as long as everyone smashes continuously there is absolutely no chance it will get out of defence mode.
You say that no monster is supposed to stay in defence and let you hit it over and over again. But what if this is normal monster behaviour for this boss? I don't see how this can be a bug. Some bosses are designed to be ridiculous unless you can find the few flaws to take it down.
The main thing about this whole set of Tara castle mission is that every boss has its weakness. A lot of examples I can throw out for this one to prove the point. For this other mission, you have to use rusty sword to cut down the defence/protection of the boss, otherwise you will be doing 1 damage only, which is ridiculous for any boss. This is its weakness. Also, for the Spirit of Partholon boss, the tactic for it is to wait for its axe throwing attack to be loaded and just before it throws out the axe you have to attack it. After that, you can attack it endlessly. And so, this would be a glitch too? I doubt it since there is at least one somewhat similar other example out there, which is Basilisk anyway.
Sure, windmill (rather, drawing aggro at different times) can be considered the Basilisk weakness as well, but for a normal shadow mission boss like this it is extremely unusual to rely on this tactic. This tactic is more reserved for the BIG bosses like Iria field bosses, G8 dragon and G9 Claim Solas. The boss itself is an abnormality, so what else should be expected of it? Moreover, you are not even allowed to normal attack it, Basilisk will retaliate instantly, unlike all the other big bosses that are defeated by windmill tactic.
There is actually another hint why the defence method cannot be considered a bug. If it is considered a bug, then Blinker/Beepers are abnormalities too. If you magnum shot it, it will attack you, however if you keep using normal shot/arrow revolver on it, the Blinker/Beeper will fly around and not attack you. Isn't that abnormal too?
