Well, then I'll try to give you a starting point. Forgive me if I make mistakes and whatnot, I'm multitasking currently. :P
For melee, I suggest using duel Gladius, they're nice beginning swords.
As for skills, it's kind of hard to pin a starting point. Since obviously the initially character is weak, lets try to get in a few skills that will help. Learn all the basic skills that you can. I'm talking about counter, def, and all the magic bolts.
Get smash to rank 9. Then I would move on to getting CM to rank 9. Gives you a nice little buff before you start ranking windmill! When you get to be a higher level, Windmill is pretty useful, unlike in Vindi imo. When you get Smash and CM to 9, then it's safe to start WM. I would suggest getting that to rank 1, while also ranking Critical Hit as you train. The reason for getting WM out of the way is that it gets tougher the higher CP you have.
A shorter easier to understand version.
- Smash R9
- CM R9
- WM 1 - While ranking crit
After that you should have Rank 1 Crit, if not rank 1 then something close to that. Just continue ranking crit with whatever skill you choose. After you get rank 1 WM it's open to whatever you want. Usually based on the play style that you developed.
There is one more skill that I would like to take mention too, and that is refine. Eventually you may want to open up to using range and of course stronger duel swords. Refine gives tasty dex which is your ranged damage and balance. So, work on refine whenever you get bored.
Again, that's just my opinion and the build I would take. Others are welcome to chime in 8U

When that happens (I experienced this both on my human and my giant) both you and the mob stand there presumeably using the counter skill, waiting a long time for each other to move and you're thinking, "Okay... now what?"
Oh, but don't rank it any further than 9 because that's as fast as the skill will load and it's damage output is pretty low especially when you compare it to shadow mission monsters. If you have extra ap to spend, get firebolt or lightning bolt. Both are a bit more practical than icebolt but are higher costing both in ap and mana.
Since you're going melee, I highly suggest you stick with what you're good at, DO NOT go for advanced magic like ice spear, blaze, fireball or thunder. These skills require you to equip a wand (which is NOT good for bashing things with) and when you unequip them, you lose all your mana (unless you use upgrades but I doubt you'd experiment with them long enough to get that far). This of course is bad because now you can't use bolt skills or mana sheild.
Oh and the most important, I don't know how long you have been playing Mabinogi for, but the advice I always give to newbies is "Try not to get hit at all period." Think of this game as a side scrolling shooter like gradius or metal slug, EVERYTHING past the difficulty of Rabbie dungeon will kill you in one hit. Everything under will kill you in around 3-5 (exceptions are obviously placed super-weak mobs like raccoons or foxes). Once you rank your combat mastery and defense, you will become the tank in metal slug, now stronger mobs will kill you in three hits.

You have no idea how many times people have told me the mentos/coke thing.
Anyway, to simplify:
1. Get rank 9 icebolt then ditch that later for fire and lightning bolt.
2. Don't get advanced magic.
3. Don't get hit.

The whole reason Okami stresses on rank 1 windmill is because of a little invisible stat called combat power or cp for short.
I'm sorry but this is a pretty complicated thing to explain so bear with me.
What it does is that it's compared to a monster's cp and that determines whether it is Weakest, Weak, no suffix, Strong, Awful, and Boss (you can check by holding down the alt key).
Many skills require you to kill large amounts of monsters that fit one of those criteras. Windmill is of no exception.
Cp is gained from skills and your stats but mostly from your skills (100% of the CP value from your highest CP giving skill and 50% from the 2nd highest).
If your cp is too high, it makes it all the harder to find Boss monsters thus you want to keep it low for the sake of being able to kill relatively easy monsters to fit the skill's training requirement.
I think that's pretty much it, Okami can pick the rest up if I left anything out.

Edit: You learn icebolt either through the magic teachers, Lassar in Tir Chronaill school or this other guy in Dunbarton library. You can either take classes from them for a cheaper all-in-one bolt package or buy the books individually which is less time consuming but more expensive.
Alternatively, you can get the icebolt book from an early newbie quest involving killing wolves near Ciar dungeon.

I suggest the noob quest since the book is several thousand gold...
But if you want fire and lightning as well, go for the classes since it's cheaper for all three.

Talk to Trefor and you'll learn smash from him. For now, get smash and cm to rank 9 then you can work on windmill.
