My favorites:
Snowboard Kids 2. Why the hell haven't they made a 3 yet? This was the best game on the n64 with the most replayability. I still play it.
I would absolutely kill for a remake. The DS version killed it though.

Kirby's Air Ride. City Limits mode is freaking awesome. Gameplay is simple but very lively and has a ton of replay value.
Hydro Thunder. Don't even need to explain why no2 propelled rocket boats racing off waterfalls is awesome.
Crazy Taxi. **** yeah.
Sonic Riders. But only if you actually know how to play. Such a ridiculous learning curve.

Since my friend is a driving game whore, it kind of rubs of on me, just a little.
I personally love the racing games in the arcades, like Initial D (3) and Wangan Midnight Maximum Tune 3 and 4.
I still have trouble finding the right times to shift gears though.
As for console games, I guess I enjoyed NFS:Shift and even Mario Kart.

Balance issues and cheap items aside, it's such an amazing party game.
If you haven't played Mario Kart with 3 good friends you haven't lived.
I didn't like Sonic Riders because since it required skill, you couldn't invite a random friend over and just play it with them without it being a one-sided steamroll.
Apart from that, it was awesome.

1) GET A FRIEND
2) GET BURNOUT 3
INSTANT GOOD TIMES
That game is so freaking awesome.

The only racing games that I were interested in were Gran Turismo and Mario Kart. Racing games werent really my thing, tend to fall asleep playing them, literally.

I used to play local wifi mario kart all the time on the DS.
I liked Sonic Riders because of how fast it was. Probably the fastest racing game I played unless you count for "unlocked speed mode" in kirby's air ride.
I mean this game is so freaking fast paced. Awesome.

That Twisted Metal game on the PS2. I don't remember, but it was lots of fun.
There was also this 3D racing game on the SNES that I don't remember the name of, but I thought it was the best thing during its time. I can't remember its name. Dx
