Check out the evie scythe guide in the guide section, it has a char of which parts of the attack are magic, and which are not.

1) The (far)greater damage portions of all of her smashes excluding Smash #1.

As for #2, you're pretty much stuck with your Battle Scythe until level 28 when you can craft the Crimson Blade Scythe, and after that is Crescent Moon for level 32. That should be all of them you need to know for right now.

Normal attacks are physical.
Demon Splitter (LR) is also purely physical.
Every smash after Demon Splitter has two portions to the attack: a physical upswing and a magic downswing. All direct-damage finishers including Life Drain are considered magic. The wisp kinda does its own thing. Oh, and Gravity Inversion is magic, too.

Everything important runs off of magic. It would be easier to list what doesn't run on magic. All of the normal attacks, LR (Not counting the drain), R, and kicks are the only things that don't use magic. I think that's pretty much it.
I would say to go from the default to Crescent and then skip to either the 40 or 44 scythe.

As for scythes, don't worry about what is best. You'll unlock them as you do battles further into the game and you can craft them if they're better and worth it to you, and if not then wait for a later one before you upgrade. I used my default one until the Crescent Moon and then I used that for a very long time until the Death Crown.
As for tokens, see
this thread. They reset periodically and you can also exchange seals for them. So, don't worry too much!

1. All normal atks, Scythe 1, upswings to every smash are not, everything else is magic related.
2.
Lv. 28-Crimson Blade Scythe
Lv. 32-Crescent moon
Lv. 36-Death Crown
All are good choices to craft (esp Crescent Moon now that silver ores aren't worth anything). You could skip Death Crown if you have problem getting gold ores, Crescent Moon looks better anyways.
