I'm not a Giant expert but I can say for sure, rank Windmill to Rank 1 as soon as you can.

WM to R1. Refine and dex skills to r1 so you can use 0-90 War Hammers in the future.
Pretty much after R1 WM rank any combat skill. A good start out weapon is Mace, then when you get more dex use Iron Maces, then with great dex use War Hammers.

It is the skill of the gods. It has no limit to the amount of monsters it can hit, it reaches 360 degrees around your character, it loads in 0.8 seconds, it ignores protection for calculating critical, it's powerful, it always knocks back, it can reset monster AI, etc.
There's a lot of benefits to having this skill, it's an absolute necessity and will help you more than any other skill can (especially at lower levels).

Well, obviously you should grab all your basic skills and set them at rank F
Defense, Smash, Counter, Critical, Combat Mastery, Stomp, Rest, First Aid, Healing, Firebolt, and your choice of either Icebolt or Lightningbolt. Feel free to get whatever else life skills you want, though try not to get any that gives too much stats yet.
And then get rank 1 windmill right away. If you have time, farm for a CP reduction enchant so you can help speed up the process of windmill training.
Even if you start windmill training right away like this, the last few ranks around 5~1 will be a total pain, so try not to delay this task any more than you have to.
After that, the smart move would be to start doing Throw and Stomp. But I skipped Throw because I don't care for the skill, its expensive, weak, and the stats just didn't feel worth the effort.
When you start refining is up to you, but you should make sure its the very FIRST dex related skill you train. Because it requires low dex to train. Since Giants need a lot of dex, you'll have to get to doing this sooner or later too.
So overall its Windmill, Refining with Throw or Stomp.
From there on its totally your call.
Edit: Go ahead and get transformation asap too. It really helps with training everything.
