Well, they're nearly 50 now, which means they had children around their 30s. They just look young because (first-hour spoilers) direct exposure to the Golden Sun slowed down their aging process. That's also why Kraden is still alive and relatively unchanged.
And some of the missing parents are actually known, but they're spoilers for later in the game. For instance, Matthew's mother and Amiti's father.

Matthew's mother is revealed to be Jenna long before the game even mentions Himi so I have no idea why they but Matthew's mother as ? when they have Himi's family tree.

Himi sucks in the game. All I have to say. Unless you change classes, then that's a different story.
