I'm a level 125 giant, and personally, I think a total failure. I have no skills whatsoever, I jacked up my CP, don't know how to use my keyboard effectively, wasted a lot of money, etc.
The question is, where should a level 125 giant be?

125 total isn't much, though, it took me until ~300 to finally get used to all the game mechanics and make the most of my underpowered starting build...
If you're a giant meleer, a recommendation would be to focus on r1 Windmill and rank Critical Hit whenever you can... Worry not about defense, since it's a game of defeating enemies before they get to touch you. If you're lacking a bit of power in your strikes, you can ask a friend to raft for Fox items and then burn/enchant those onto all your gear for easy damage until you move onto better enchants.
Combat Mastery, Stomp and Smash would be after that but you won't have the AP to r1 all those skills just yet, so there's no point in wondering about average damage... Just focus on your skill ranks, one at a time, and use enchants/weapons to boost your damage. It's also hard to gauge dungeons you should be able to conquer, since most fomors can OHKO you well into the higher levels if you make a mistake... it depends on how you play, and how well you can use the skills you have.

Heres some enchants for newbie melee'rs in general.... GIANT.... GIANT..... GIANT.... GIANT .... on everything you can lol.. their not that expensive and provide you with some extra str (it aint much but it helps early on) Rank 1 these skills probably in order
Side by side -WM and Throw attack
-stomp
-Taunt
-Refining

Honestly you should be able to solo every dungeon besides Peaca by now. Giant meleers have an incredible amount of strength even without enchants. My friend is around your level and he easily equals my damage and I'm a pure melee human around total level 450 with a base of 142 STR. I'm not an idiot when it comes to ranking melee skills either. Grab a stiff cap, dual stiff maces, and go nuts in Rundal. Skeletons have decent CP so training Windmill on them is quite easy. If you want to test out your skills as a fighter fight the Rundal Cyclops boss without equips or weapons. You'll learn how to avoid attacks, how to counter large and quick enemies, and skill timing and combos. This doesn't mean use firebolt counter...

I think a majority of my dilemmas occur when I don't know how to fight.
If I'm correct, a complete newbie with all Rank F skills could solo many dungeons if there is patience and you know how to fight. How do you fight without falling, I guess?
It seems to be my dilemma, since I can easily hit 600 Crit.

Don't get hit. Anticipate Multi-aggro. Evaluate the situation. USE WINDMILL!

Realistically speaking, though, more damage = faster killing and elimination of multi-aggro before it is even formed. Using windmill without having enough damage to kill quickly and effectively will limit you in most situations... In that case, smart pet usage is far more likely to keep you alive.

Make friends who are decently leveled, and run dungeons with them. Watch how they fight. Learn from that.

If you windmill when you kill monsters off to begin with the invincibility effect from windmill doesn't allow them to aggro you right away. Smash and Windmill your way through dungeons basically. Being in deadly the entire dungeon sure teaches you not to get hit.

But the point is that at the lower levels, when Windmill isn't strong enough to kill monsters off, the invincibility will only deter fast surviving enemies for a second before they start gnawing at your ankles. Pets are highly beneficial when you cannot overcome this through raw damage, specially when you can use them to make your windmill even more effective by controlling aggro and mob placement.
If Windmill and Smash were really all you needed, there wouldn't be a point to ranking STR skills and get high-end damage enchants... Killing faster is always safer, and when you can't kill fast enough, pets are your best bet at handling multi-aggro.
