Two entries in one: charcoal and fertilizer
Charcoal - obtained by cooking wooden sticks inside a furnace.
Every 2 sticks will yield one piece of charcoal.
Uses:
-can be used as a fuel source
-if "placed" on another block, if that block is made of smooth stone, wooden planks/doors, brick, or has a painting on it, it will allow you to write on that block, like writing on a sign (hooray vandalism!)
-if crafted like so: [C][C][C], it will create 3 charcoal dust that can be placed directly on any other block without taking up space, like redstone dust or snow, and be lit on fire
-can be used with books/paper to write in/on them (1 charcoal per page?)
-hold the book/paper and right-clicking while wielding to open/read/write, also works like writing on a sign
-charcoal will automatically be consumed from the inventory
-writing on signs will also take charcoal
-can be used to make fertilizer:
[C][G][C]
[D][F][D]
C = charcoal
G = gravel
D = dirt
F = raw fish
This recipe yields 2 fertilized dirt blocks, which are placed like ordinary dirt blocks.
When tilled, this will grow crops 1.5 times faster.
(I figured that this would also create a use for the currently useless gravel)
If not tilled, it will grow grass, trees, or reeds 1.5 times faster than usual, depending on what plant is placed on the block.
Replacing dirt with sand will yield a fertilized sand block that will grow cacti faster.
Once the plant that's growing on the fertilized block is removed, the block will turn back into ordinary sand/dirt.
Having grass grow over a fertilized dirt block will also consume the fertilizer and return ordinairy dirt.

A Glider.
C= Cloth
I=Iron
[C][C][C]
[I] [ ] [I]
[I] [I] [I]
The cloth can be the part that catches the wind, and the Iron can be the handle bars you hold on to.
I wish there was a way to turn cloth into strings.
You know, since you can turn strings into cloth? :S

Its like mabi, strings become silk and wool becomes cloth.
And I like the charcoal idea.

As of the 1.2 update that happened today Skeletons now drop bones, which can be made into bone meal which is a fertilizer, so your fertilizer idea can't really be used.

Bad luck, haven't been keeping track of updates. Both charcoal and fertilizer have both been implemented, although they're not quite what I came up with.
Forget the second and third entries then, although you maybe could consider the additional uses for charcoal not implemented in-game.
EDIT: New entry...
Mirrors
[I][G]
[I][G]
I = iron
G = glass
Recipe yields 3.
Places a mirror at a 45 degree angle facing towards you that reflects light at 90 degree angles.
Light will continue to lose strength when reflected the further away from the source it travels, as usual.
Useful for lighting underground caves with sunlight, especially when torches will become temporary and burn out.

The winner of this event....
Is.....
Sleeperdial's Spike shoes and hand claws! Although, all the entires were actually really freaking cool! I hope some of these show up in game sometime in the future, in a similar form! But honestly, the idea of being a minecraft ninja and getting revenge on all those creepers just seems.....right.
Sleeperdial, Im trying to think of something cool to give you besides just gold, but I will send you gold now.
