Drawing, oh how I wish I possessed these skills.. I wouldn't be so screwed in the Art electives I'm somehow ALWAYS manage to get.
Also singing, I'd love to be able to sing "Sing" by MCR well..

Drawing; if I was really good at that, I'd be churning out some explicit Mabinogi yaoi. Sadly, the best I can do are design sketches. Having a good speaking voice range would be nice too, though I think that's possible with practice, which I've never done for that.

I don't even bake, so I'm screwed.
If I had to pick anything, I'd probably pick singing. Even if I'm a horrible singer, I still love to sing. Being good at it would just make it that much better.

It's funny that a lot of people said singing and drawing... because those are two skills I actually threw away. Singing I regret dropping since I go to karaoke a lot now and end up disappointed in my ability. Drawing not so much since my dad is an artist and was pretty much an art nazi getting me to master a lot of different mediums. Took the fun straight out of it.
I'd like to be better at a number of Chinese martial arts, though. I'm fairly well versed in Japanese arts since I was lucky enough to find skilled masters in the region, but I haven't had the same luck with Chinese styles. It's mostly a pipe dream and wouldn't benefit me too much, but my fascination with pa kua chang is mostly unfulfilled. (There are a few places to learn in NYC, incidentally, just not as accessible as my past experiences.)
Other than that, I suppose I'd want to be better at long distance running. Ever since I ran track in my early teens it's been a problem for me. My friend wants to run the NYC marathon this year and I won't be able to join her.
