Number crunch!
Fastest collection = 2.5 seconds
Double collection = 4 seconds
In 20 seconds, speed upgrade will allow you to collect 8 times for 8 items.
In 20 seconds, double collection upgrade will allow you to collect 5 times. With 40% rate of double collection, you'll average 2 extra wool for 7 items.
This is assuming, of course, that the sheep is stuck and does not move. If it isn't stuck, you won't be able to collect twice between each move even with the speed upgrade, which makes it moot. In that case, double collection is better.
Actually, you can shear a sheep 3 times before it moves with full speed upgrade, that's what I've always did until I tried out double.
The good thing about double gather is that the extra drop doesn't subtract from the sheep's total amount, so you can actually get more out of it before it runs out. You can shear it twice before it moves too.
This is nice because the paper sheeps are always being sheared.

Magic Damage is +9%.
Check your Character window. Under Magic damage (or whatever it's called) at the bottom, you'll see only a number, not a %. It means magic damage % nonetheless.

Okay guys! Another question about Gathering knife. I will be getting a full "Thief" set for luck. Accessories and all(strictly for gathering materials of course). Is it worth getting 40% double drop still?
I will have thief on armor, hat, accessories, shoes, and gloves. that's luck right there not including title.

You can still get huge/normal lucky gathers with a double gather knife, so yes.
Luck doesn't add that much to the chances.

You can't go wrong with either.
Faster shearing will provide more stable output and a greater rate of scoring lucky bonuses at the cost of faster durability loss and heavier repair fees. If you need a good gathering knife, mobs in Taillteann Defense drop knives with 11 durability frequently.

When you go over magic attack on your character page, it says "Every 1 point of magic attack increases damage by 1%"
Basicly, you got the same thing.
And i thought it was you who asked that same question.
Being ignored ftw

If it's paper sheep. Go for double. Especially if they are empty... you might as well try your chance to get 2 pages instead of one. Fun fact, doubles doesn't affect how much "pages" or anything is left.
For example, if an item has "5 pieces of wood" and you got a double, it won't have 3/5 left, it will still be 4/5, or it only counts as one wood collected. So, if you got 5 doubles in a row, you can get 10 pieces of wood from a tree.
Same applies for wool and paper sheeps. If there's one paper left, and you get double, it'll come out as two. =p

Here's a random, semi-related question for someone to scratch their head over.
Can monsters/pets score lucky bonuses? If I started a spider farm right now, can the spiders in my farm start jetting out cobwebs? The same applies to gathering pets.
