You just need to work on it for about 4-5 days... even at decent quality, you have a chance to get a pass.

You really only need 2.5-3 days. I suggest waiting till your aging is about 42 before extracting it (you gain 14 aging and some change every 24 hours). Do not let purity, acidity or freshness drop below 50 in those 3 days. The most weighed stat is aging (if you were to turn in your grapes and then collect a wine with 100/100/100/0, it would be a horrible wine; yet, if you were to turn in a wine that was 50/50/100/42, it would be considered average which is what you need). The more mistakes you make, the longer you'll want and/or have to let it age to accommodate for them. If you feel the wine is going be incapable of being salvaged, start over; at least the turn-in gives you some free xp, even if the wine is abysmal.
Average wine will yield you two shadow mission passes; that's two chances to get a coupon. Since you're looking for the battle sword coupon, that means you'll be visiting Lezarro's Winery, not Eluned's. That shadow mission allows 1-2 people, so bring a friend. It is possible to solo, but bringing a friend means 2 treasure chests at the end = twice the chance for the coupon you're looking for. Above average wine (which I've often attempted to make but always slip up on due to tiny mistakes in replacing the barrel) will yield you four passes for a particular shadow mission. The coupons do not always drop from the end chest as you may already know, but they have a very decent drop rate. It's not uncommon to get a pass from each mission attempt.
