I was wondering how the treasure chests at the end of dungeons work
say if I was looking for Colin Plate Gauntlets
or a pass
like how a certain amount of people would affect the end chest etc

The chance to obtain a certain item from a chest is practically the same for soloing chance, I'm pretty sure. Just the more people you have, then the more chance such as 8 people...You would have 8 chances to get it, rather than getting 1.
The amount of people that you have with you doesn't affect the overall percentage of getting the actual item, as I know of.

it depends if the reward you're after is a primary or secondary reward. secondary rewards are things like herbs, powders, passes, while primary are items and eses, things like that.
primary rewards, there will be precisely one no matter how many people you have with you, same chance for solo or 8 people.
secondary rewards, bring more people if you want them.

It doesn't affect the individual chance, but it does increase the overall chance.

Although, for Colin Plate Gauntlets I believe they are a secondary reward, meaning more people gives more chances.
But you will never get more than one enchant/enchanted item, regardless of how many people there are.

Rain: Only for secondary rewards does the amount of people matter. But as Justified stated, he thinks colin gaunts are a secondary reward, so the more people there, the higher chance you have.

OP is asking "how chests work" and using Colin Gaunt as an example. Your statement is incorrect since most items are main rewards, and thus it is a hit-or-miss one chance. For Colin Gaunts specifically, it is (possibly) on an individual basis.
So generally wrong, but specifically right (maybe - I don't care enough about Colin Gaunts to verify it's secondary).

Colin Plate Gauntlets are a primary reward. The last time they dropped for me, everyone else in my party got mana herbs and gold.

That's debatable since Shadow Missions don't have primary rewards. It could be that non-crystal rewards just have a very small drop rate which makes it seem like only one can drop at a time.
Cylinders in SCC is an example of multiple non-crystal drops.
Likewise, enchants from Enemy Behind frequently drop from both chests.
However those could both be secondary prizes, but seeing as how Shock pages and other good finds are incredibly rare, it'd take an enormous sample size to determine if they're actually primary.

If there is an item from an end chest that you want and there are chests in dead ends (i.e. Alby Adv), do NOT touch the chests in dead ends. If you leave those be it increases your chances of a good end chest reward. I forgot who told me this. But I tried for a dustin helm and did this and got one first try. So Im either stupid lucky (which my AR8 hunt proves otherwise) or that method has merit.
Other than that it's been explained.

could you clarify on what you mean by dead end?
