I guess that the proficiency for these are supposed to go pretty slow, but I'm confused as to how me making Fine Cloth, which is like the lowest material to tailor in tailoring, pretty much gives the same prof as making Scarlet Witch skirts, when they take 2mins to make.
Any advice?

After a certain point, recipes will stop giving you proficiency points. By 10/99, Fine Cloth won't give you any proficiency points.

So should I do, like, things in red for me to gain more prof?

Things in white are the most recommended for the best time:Proficiency ratio.

From what I've seen, an item will give you two points when you do it the first time, and one point after that. I don't know how consistent that is though -- sometimes I'll get two points randomly.
I've tried doing something in the red only once and it only gave me one point. Then it gave me two the first time I made the same item after it turned white. :\

1 is the most common amount of proficiency. Occasionally I'll get 2 proficiency, and very rarely I've gotten 3 proficiency. The item's level doesn't seem to matter (as long as you would get proficiency from it in the first place).

Red = Inefficient for Time
White = Perfect, likely to get 2 points of proficiency.
Gray = Very quick, but 1 or 0 points of proficiency.
