It kinda is like Lego, but it definitely won't take you 30 minutes. Expect to spend a couple hours if you want to get it done carefully, especially if it's your first time. I wouldn't say it's hard, but it can be time consuming and you have to be really careful. Mistakes can cost you a lot of money.

As for figuring out how much power you need, the simplest way is to look at the graphics card's listed power requirement. The 5670, for example, is pretty anemic, listing only 400W as the requirement. More powerful, mid-range cards typically have a requirement around 500W. These figures represent the total system power use.. estimated and hugely overblown to be on safe side. If a card lists 500W, your system will probably actually only use around 200~300 total... depending on the other components. So basically, don't worry about it... and there is no need to get something more powerful "just in case" because there is a ton of headroom already.
For the PSU, I'd get either what the cat posted, or the Neo Eco 620W. It has more power than you need, but who cares. It's a high quality unit and it's fairly inexpensive.
You don't need that Zalman CPU cooler.
