On the other hand, I've never seen a 0 for my defense stat whenever I look at my character stats.

I don't think that defense is ever "0" just because of Mana Shields. DEF just doesn't matter while shields are up due to INT determining the effectiveness of the Mana Shields, so it might as well be 0.

It's true that you don't take any damage from anything while the shields are up, but you always will have some defense, even without any armor. I'm not sure where you got the idea about 0 defense.

Certain people saying conviction is useless in pally form because you have 0 defense.

Oh I see...so because Evie normally doesn't take any damage with mana shield active, people think that damage won't be dealt to the mobs, that the skill itself has to negate damage to deal damage?

I would hope so. As you know, your mana shields take damage even when you don't. If it works this way, then Evie shouldn't be at a terrible disadvantage to using Conviction, but I can't say how it works.

Though I heard that the defence is considered to be 0 when mana shields (so I guess conviction would just break after 1 hit) are up. That makes absolutely no sense whatsoever, could be a glitch me thinks.

From some of the forum posts, it sounds like breaking on the first hit is commonplace among all but Fionas for anything you'd actually want to be able to attack and absorb hits from. It seems like a weaker version of Mana Shields than what Evie has, just without the possibility of flinching during its use and a little extra damage upon activation.

those videos make conviction look really weak though...
