Not Easily. I've tried many times and there's a lot of crappy freeware for this and tons of shareware or software that you need to pay. I have yet to come across any good open source solution.
Even recording me playing a flash game is a royal pain in the rear.

Try Handbrake (free).
I heard the latest version can encode .flv in .avi format
(though I've read mixed reports; for some people the audio gets sped up while for other people the audio is normal).
It can encode in other formats if you don't ONLY need .avi
(no personal experience with it though, I've just seen it recommended quite a few times)
