None are actually useful, but Platesmithing or Goldsmithing are the best choices.
Since 3 Star Ivories are completely outclassed by the Lv. 61 weapons, but 3 Star Lv. 56 armor and accessories (especially accessories) still have some use.
If you want to prepare for future updates to Expertise or something, then Platesmithing should be the best. I mean you do have 5 pieces of armor and only 1 weapon.
(Though a 3 Star weapon will give you a bunch more attack.)

Weaponsmithing isn't entirely bad since it allows you to make Ivory weapons for cheaper, and a +12~13 Ivory weapon is on par or better than a high-end 61 weapon. It's feasible to make a much cheaper +12~13 Ivory weapon than it is a +10 Black Hammer, for instance. And a +13 Silence is just as good as a +11 Dreamwalker Longsword.
Just don't go thinking that you're a shoe-in to get a +12~13 even if you do spam Ivory weapons at Ferghus.
