hard subs are edited into the video and you can't edit them at all, soft subs are in a separate file (or not) and can be easily edited like font size, color, style, etc

In video files, there are two kinds of subtitle: hard subtitle and soft subtitle. Hard subtitle is a part of the video images, you cannot disable or hide it when playing the video file. Soft subtitle is an independent stream, you can turn on or turn off it when playing.
By the way,soft subs can be converted to hard subs with some tools like Faasoft Video Converter after searching on Google.
