The problem seems that its not possible to server hundeads of people the same thing and cook it well.
Just think, not only are those school having like 3-4 people probably cooking all this, there also trying to make it in a way that wont be disgusting. They need to put in things people actually will eat, like what they said about pizza and hamburgers with healthier ingredients.
But then you get into the problem that those healthy ingredients are more expensive, and then the other problem that your going to get resistance from the companies that there jobs depend on you serving their cheaply made and very bad for you meals, which are bought because again, there cheaper and schools are often underfunded.
And from what it sounded like, the problem sounded more like the meal options were bad and boring/tastes horrible. If the food tasted good and they didn't go around telling everyone "THIS STUFF IS LIKE DIET COKES, IT LOOKS THE SAME BUT TASTES DISGUSTING" then students would eat it.

Contrary to popular belief, healthy food is actually really tasty. The only way it won't taste good is if you cook it wrong, like Ninjam said.
So either the food is poorly prepared, or people are just stubborn and ignorant.

I'm picky so it doesn't matter, I bring my own food.
This stuff sounds pretty yummy, though. Better than our school where you can get a slice of pizza any day of the week, deli sandwiches, or a salad drenched in dressing.

Throughout my whole secondary school (6th-10th grade) education I virtually never ate the lunch there, and just went without food. Unless the dessert looked nice, which it usually didn't
Also, vegetarian curry sounds disgusting, though I recently made veggie pizza that turned out a lot better than I thought it would.

Healthy food is delicious but like any food it has to be done right. The reason unhealthy food is so popular in cafeterias is that there's very little preparation to do, they just need to unpack it and heat it up. So instad of some disgusting crap prepared by an old lady who forgot to put on a hair net, it's unhealthy crap that any dumbass could stick in a microwave or oven.
With things like salads or soups or other prepared meals it's going to not only look gross, but taste worse than it looks too. Even the junk food at my school was nasty, whenever they had healthy stuff it was even worse. I don't think I ate food there more than once.

Let the little fools starve. Poor nutrition leads to poor performance in school. Poor performance in school leads to a bad education and a low paying job. Then when they finally realize that their life sucks because they refused to eat properly, they can teach it to their kids. If this generation of teenagers are screwed, I say let them so they can teach the next generation how not to be. Sometimes experience is the best teacher.
