Here are a few ideas...

As you can see, I'm going for 3TB, cause I need a lot. Now, um... for information...
I have four 1 TB WD Caviar Blacks at the moment, they all have less than 100GB remaining on them, in other words... I'm gravely in need of space.
My current motherboard & case can't even hold any more internal HDD's, so I'll need an external. What's more, my motherboard does not have USB 3.0 connections whatsoever, only USB 2.0.
Therefore, you will notice one of the above has USB 2.0 and the other has USB 3.0. At this time, that wouldn't really affect me whatsoever. Chances are, things are going to be going onto it at about 1.2mb/sec anyways, so not even close to the 20-30mb/sec or so that USB 2.0 will probably do.
It'll be used for storing anime and watching them off it. That's about it.
I don't know anything about externals, so I figured I'd ask.

Have you thought about setting up a server? With the amount of data you're talking about it might not be a bad idea to look into it.

3 TB would last several years for me, as for a server.... way too expensive for what I need right now. I still need to build a new PC if this one ever dies on me. So um... just the external hdd for now.

Talked to a friend, he said the larger drives should be fine as long as you go with the power supply ones that require a plug in because they tend to use the 3.5" drives.
The usb powered drives tend to be smaller size, and in general the faster and smaller drives get the more prone to centrifugal issues they are.
Also of note, seagate seems to have fallen off in recent years in terms of quality drives. Alot of people I know tend to prefer WD these days.
ps. sorry for the late update

There's a lot of issues with 3TB external drives these days.
I haven't been able to find the exact cause but it seems some drives will randomly lose their partition information. It's happened to several of our clients, and I've seen it all over forums and blogs. It seems to be independant of HDD manufacturer (I've personally seen it on Hitachi, Seagate and WD) and external enclosure manufacturer. I suspect it might have to do with plugging a GPT partitioned 3TB drive into a system that doesn't support it but I haven't been able to prove it. So I don't suggest any.
With that said, seagate are fine, in terms of actual drive quality and ignoring the mysterious bug, seagates have not failed us since they came onto the market. WD has a few times.
You might also want a NAS but it's much more costly than a single 3TB external drive. Seagate does have a very small home user NAS in 3TB though, but all it is is a single 3TB drive with NAS functionality:

Or you can just get a bluearc, they make good porn storage.

What would you recommend then? Maybe a 2 or 2x2?

It sounds like you're only accessing the contents of one or two at a time, so instead of some sort of external RAID/JBOD setup you could go for some external form of storage holding... I'm not sure of the terms and the one retail product I saw previously I can't remember the name of, but sort of like a docking station for harddrives, to get past the internal holding limit of your case. Then you can go for more stable (and less-expensive) internal drives with a higher capacity for cost.

I don't like external drives. They tend to fail more often. I prefer internal drives with 5 year warranties, compared to the 1 year warranties offered by both of those. >_>
And like Osay, I'm also not a fan of 3TB drives. 1TB drives are more reliable, and I know that 2TB drives weren't too reliable a while back. But maybe the technology finally caught up to make them more reliable these days, I dunno.
Personally, if I were in your shoes, I'd scrape up some change and build a cheap server and use that as a NAS. Or you can get
one of these, and jam two 2TB drives into it.

I'm still stumped on what to get...

I ended up getting
this instead.
It was sounding like 3TB was a no-go, and all the stuff being recommended, while nice, seemed really unnecessary (and too expensive). So hopefully this'll be alright. Got it today.

Yea it'll be fine, good for the price and what you get out of it.
Most of the suggestions I think were more geared towards a general long term solution for you.

Well, I still need to build a new PC and spending $400+ on something I could spend just $100 and achieve the same end, it's just too wasteful right now.

Same size and brand I got, the only difference is that you got the 3.0 USB. Got mine for around $80 if I remember, used for storage purpose, half way filled with no problem. Ijust dont understand why I cant find it on NE or TD :/
Whats wrong with your current PC?

Well, you can search for my previous threads in this section.
Basically it was BSODing on startup a good 70% of the time, after my battery backup's battery exploded and then there were a lot of lightning storms (and I got frustrated and kept turning the computer back on), but after replacing the battery for the battery back up... the BSOD's seem to have stopped, although I leave it on for 1-3 weeks or so at a time now just to be safe, never know when it could die.
The speed on it has also gotten very slow... I'm not sure if it's my HDDs (1 TB WD Caviar Blacks), or the CPU (which I know is somehow defective, since it doesn't detect all the RAM and I've already tried changing every other possible part it could be).
I'm not too concerned until it physically breaks on me, but...
I do want to be prepared for when it does.
Also, I believe the USB 2.0 one uses a 5400 RPM HDD, while the 3.0 one uses a 7200 RPM HDD.
