How exactly are you effected by losing -100 INT or -500 Matk? Is -2 INT or -2 STR even noticeable? How much of a particular stat do you have to lose before it actually begins to make any real-world difference?

Your effective attack on a boss is (Attack - Boss' Defence), with a cap of 10,000.
1 Str is about 2 Attack. 1 Int is about 2.5 M.Attack (I think).
So really it becomes noticeable when that 500 M.Att is a large portion of your effective attack. Most current bosses Def hang around 6k while most Hero mode bosses go to around 7k-9k.
So if you have say 14k M.Att on a boss with 6k Def, you'd get 8k actual M.Att. 500 of that 8k is quite a bit, but only a loss of 1/16th of your M.Att. If the boss now has 9k Def, while you still have 14k M.Att: then you end up with an effective M.Att of 5k, and 500 is a loss of 1/10th. If you only have 12k M.Att against this 9k Def boss, then you will lose 1/6th of your M.Att. But if you're over the cap of 10k, then losing 500 is nothing.
The more you have, the more you can really afford to lose. But the gains you get from sacrificing this Att (usually Crit, Balance, or Att. Speed) should be significant enough for it to be worth it. The worst -Att/M.Att is really only around -200 due to Leopard.
