I didn't say it would turn into new cheeses, just that cutting both parts at once is actually two cuts. One for one half, and one for the other. Otherwise you're counting one cut as one cutting motion, in which case the answer to the riddle is one cut. Just make one long and slow cutting motion, and move the pieces into the path of the knife again before you're done "cutting".

Not that it involves the riddle in anyway, but it's magical cheese! It cannot be broken down except only by a knife. You wouldn't be able to chew it into tiny bits so it can be swallowed. Okay, so what if you cut it up into tiny bits so that they can be swallowed? First of all, you wouldn't be able to savor the taste that way. And secondly, stomach acids would not be capable of breaking it down either.

The thing here is that the riddle never specified what shape the cheese was in.
So, Axx's first answer was also my first answer. In that case, we were right and wrong at the same time. "Right" in the sense that ignoring the definition of "cut", and in the sense that you were of cheese in a cylindrical shape such as brie or camembert. If you took the birthday cake hint too far, you would end up in this conclusion.
However, if you were thinking of a slice of cheese, you would fold the cheese accordion style and cut it like that. In sense, this is similar to "moving the cheese into position as you do one slow, cutting motion". Except you're doing this prior to starting the cutting motion. Though, string cheese method works very much as well, and is also valid!
Another pointlessly fun riddle. You have six coins and three cups. With those coins, in one cup, put one coin. Another cup, put two coins in. In the final cup, put 3 coins. Show us how that is possible.
Easy right? Now do it with only 5 coins available. Then only 4 available. Then only 3 available.

it doesn't have to be string cheese though, you can do the same with a irregularly shaped slice of cheese and a thick knife.

are those like the dolls? Regardless, it does not matter. Riddles can have more than one answer. Whenever I choose to disclose the answer I was looking for is random. As long as a method is provided, and is valid, it works.
Though, the method I'm thinking of, the moment you find out the way to have 1 coin, 2 coins, 3 coins, in the three cups with only 5 coins, doing it with 4 and 3 coins becomes easy. However, you cannot do it with any less coins from that point. I should stop with the hints.
