I tried doing it earlier and it didn't work, it was grayed out, now it works.

Learn to read instructions.
Control Panel > Appearance and Personalization > Display > Adjust Resolution: Change Orientation from Portait to Landscape.
Even if it's fixed now, if she knows what happened and how to change it, then she won't have to deal with the problem anymore.

I've got to admit, I was amused by this as well.
As for how it happened--video driver control panel software usually comes with hotkey shortcuts for various things, including screen rotation. So go dig around in the menus and disable 'em if you don't want this to happen again. :P
