Whenever I put my headset in, Skyrim crashes, but when they're out it works fine, the second I plug them in it's poof, and if I try to reopen the game I get past the Bethesda screen and I see the Skyrim logo for a few seconds and then it crashes.

Oh, this is caused by the sampling rate of your sound being different if you plug in your headphones, just change the headphones sampling for skyrim to 48000hz

Whoops, yeah, I meant sampling rate. It's just that everytime I see hertz, I tend to generalize it as sound frequency.

Well, at least rate and frequency in this case are the same thing, so you were partially correct on that technicality front. :P
