I'm kind of lost on which one to use. Right now I have a Shield Badge, Warrior's Courage Emblem, Ghostly Ring, Thor Belt, and Ocean's Embrace. Some of the S2 rings seem decent, but I'm wondering whether I should sacrifice defense for offense.

I use my accessories interchangeably. You should prioritize defense over offense when playing spears, and offense over defense when playing swords.
Spears have fury infusion, easy 900 attack.

There really isn't much else to do with accessories except enchant/get higher star versions of them. From what I've seen, S2 accessories are stupidly expensive (and the good ones require Fangs, so yeah).
The only change I'd even think of would be to a double Ocean's Embrace. And that's only since it has Def on it naturally, which means you can get +Def Power Infusions using 200k stones.

I see Monark's Nose Ring going for like 900k~1ms while Ocean's Embraces costing 3m.
Wouldn't I lose some stats if I trade in my Ghostly Ring?

Well, ring comparison. Only looking at stats I consider relevant.
Ocean's Embrace
+100 Def, +40 Str, +40 Agi
Ghostly Ring
+47 Str, +27 Agi
Crescent Moon Ring

Kielu Rose Ring

Monark Rose Ring
+55 Str, +35 Agi
No idea what the going price of Crescent Moon Rings are, but it's the best raw stat wise. For the Rose Rings, 8-15 Str is like 16-30 Att, which is hardly worth a swap.
Now if you're wondering why Ocean's and Ghostly are still viable.
Ocean's Embrace
Power Infusion. That's the ONE reason. Since it's a Lv. 60 ring, it doesn't need the expensive 8m element stones. What it means is you buy the 200k-230k Water Element Stones and do power infusion. If you're using the cheaper stones, you can only get an infusion that modifies the stats that are already on the item. That means that power infusing a Rose Ring only gives you the chance to boost Str/Agi/Int/Wil. By like 4 points at most.
But Ocean's has Def on the item itself. You can fairly easily get an extra 100-105 Def from an Infusion on an Ocean's that you will not be able to get on any other ring without extensive spamming of 8-9m Element Stones. So it essentially has a 200 Def lead over every other ring except for the Protection Ring, but that one has no other stats.
On that note, a Protection Ring could potentially become a ~625 Def accessory with Warlord/Passion + Infusion. If you want to stack Def that much. I still like the balanced stats from an Ocean's Embrace more though. 94 Def for 40 in all stats is a trade I can live with.
Ghostly Ring
The major point of the Ghostly Ring is the set effect. So the question here is, what's your weapon? If you're a Spear Lann then you'll only have the 2 piece set bonus. If you're a Sword Lann, it's dependant on if you're running the DWTS or not. Chances are you might be using a Raider's or Twin Sabre, so there's still the chance of not having the 3 piece bonus. Also eventually when you get to 70 weapons, you won't have the 3 piece bonus.
So what does using the Ghostly Ring + Thor Belt get? 155 Def, 15 Str, 15 Agi, 15 Int, 50 HP.
That's in addition to the ring's stats, essentially making it one of the better rings stat wise IF you have the set effect in place. With the 2 piece set bonus, you'll have almost as much Def as an infused Ocean's, and about the same Str/Agi as the Rose Rings. The 3 item bonus is an extra 35 Def, 3 more points to all those stats, and 25 more HP. Going from 3 piece to 2 piece bonus is fine. Going from 2 to none is probably not advised. If you want to replace the Ghostly Ring, you'll want to replace the belt as well.
Given that the Thor Belt is one of the better belts currently available. The only other alternative is the Evil Monster one. Replacing the Ghostly Ring, you'll have to take into consideration swapping the belt to an Evil Monster as you'll get better stats once the set bonus is gone. So this question is more of a 2 accessory pair question than a stand alone question.
So yeah. I like the Thor Belt/Ghostly Ring/Ocean's Embrace for a balanced set. Thor/Ghostly/Crescent would be a balanced set oriented towards offense. Evil Monster's/Protection/Protection or Evil Monster's/Ocean's/Ocean's would get you the best Def stats. Evil Monster's/Crescent/Crescent would be the best for full out offense.
Stars and enchants are also both factors as well. But stars are pretty minor and enchants are costly and work on any accessory. So I'm not considering those. Only consider them if your stuff is already enchanted.

I'm not going to write a full Power Infusion guide as I don't have time for that.
Just go to Videk, he'll explain the obvious stuff. I already explained the most important distinction above. There are two type of stones. Element Stones for 70/80 equipment that work on any type of item. That and Average stones, in varieities for weapons/armor, cloth armor, and accessories in the 30-60 range.
If you're using a 70/80 Stone, you can get +/- any stat. That includes Att on armor, Stamina on random rings, Crit Resist on your weapon, etc. If you're using a 30-60 stone, you can only get +/- stats that are already on the base item. That means armor can only get Def, Crit Resist, and the four major stats (though I haven't seen Str/Int on armor, so I think those might not be obtainable). But sets like the Colru sets with Stamina built in can be infused for Stamina as well.
As for enchanting. They're all stupidly expensive but.
Healthy as a cheap suffix.
1 Berserker suffix for the stamina regen.
Passion as the best suffix, 200 Def/2 Stam.
Warlord as the best Def prefix.
Significant otherwise for the prefix.
Or Strong if you're cheap, but the stats on it are relatively minor except for Stam.
There are some niche enchant setups like WB/Enth + Fast accessories, but you don't need to know those.
