I know each of the armor proficieonies are for different types of armor (light, plate, etc) so what I was which of these would help me the most to rank when it came to the type of armor I'd be getting?

Plate is almost always the answer for any melee class. All of Karok's personal sets (Barbarous and Cuallamech) are Plate. Not to mention how both 70 sets require Plate (even if they both have one Light piece) and the popular mixes (BH/Apo, Ingkells/BH, etc.) all require Plate as well.
Light is only used for a Raider's based Att set or an 80 set. Heavy is used for a few 60 mixes like some parts of Swift, 80 sets, etc.
Really just get Heavy as high as you need for your midlevel sets (Blood Prince, Laghodessa Slayer) and kick your Plate Mastery to either r9 for 60 items or r6 for 70+ items.

Alright so it looks like Im going primarily plate. Do you have any specific armor set reccomendations at certain level marks? For example at level 2x, 3x, 40x etc...?

I'd suggest jumping using the non-exquisite variants of most armors, as that's the cheapest way to do things now.
So use the Veteran Raiment set until you can use the non-exquisite Blood Prince set (I skip Savage Leather), then use that until you can use the non-exquisite War Edge set. From here you can either go for a Heavier Tyrant (at 36) or Spider Lord (at 41) or Laghodessa Slayer (at 44) set. The other option is to go until around 52 or so and get the Soutern Winter set or go to 54 and get the Exquisite Barbarous set.
Regardless, I'd only take one of the last 5 options as they all will cost 100k-500k to purchase (sides the Heavier Tyrant). The only exception would be if you were using Heavier Tyrant, in which case getting one of the 50+ sets before 60 could be helpful.
Then I suggest the 3 BH/2 Swift combo at Lv. 60 (Helm/Tunic/Pants Black Hammer, Gloves/Boots Swift). Switching to the 3 BH/2 Apocryphal combination at 70 (same pieces, just using Apocryphal Gloves/Boots instead).
