Key shows are extremely overrated in my book.
But then again, that's my opinion.
If you're looking for slower paced anime, try giving Working!! for a try. A short (two - 13 episode seasons), funny, and episodic anime about life around working at a restaurant.
If you're looking for characters and character development, I definitely recommend Baccano! But I would warn you, it's pretty fast, and the story changes points of view very constantly, so it leaves most viewers rather confused. Otherwise, it has an AWESOME cast of characters that are so well developed that you can't even believe it's only 13 episodes!
I would also recommend Puella Magi Madoka Magica if you're looking for something more dark and sinister.
But if you want something light and heartfelt, give Usagi Drop a try too

Uhhhh Ergo Proxy was one of the weirder shows Ive watched, but it was enjoyable, to be honest I didnt watch it too carefully, I watched it while doing art projects, but it was interesting and different, the plot was a bit different, a bit philosophical, but also strange, it might be more up your ally, as Im not sure what you enjoy.

I have to toss up my support for these. Ergo proxy is my favorite anime for a whole host of reasons, although you almost have to watch it twice, because a lot of things that happen early on make more sense once you know how it ends.
Mushisi has some of the most beautiful artwork I've ever seen in an anime, and it's pretty intriguing. Also, it's definitely slow-paced as each episode is basically stand-alone.

I gonna second Mushishi, Samurai Champloo (in english) and definitely Baccano!. I havent finished S;G, but from what I watched I really enjoyed it. Oh, and I really liked Hyouka.
