Since when has Pokemon main-story ever been hard though???
Mostly it is easy. Except when you get full 6 Pokemon parties you have to grind and they get really weak if you don't. Just the final battles are usually something of a challenge. In this I just stomped over all five teams with severely overleved Pokemon. :c
Cynthia was hard, Ghetsis was freaking hard. Whats her name in this was paper.

Oh man freaking Ghetsis, I really hope he makes a cameo in Z ( if we get it) and we can battle him he'd be all insane with strong pokes.

On a slightly related note- are there any extra high level post champion fights in this one?

Not that I can find. Champion and Elite Four stay at their pitiful levels and pokemon even post game. Only post game story also features pitiful pokemon and your rival also has level 60 pokemon. Have not found any one with over level 75 pokemon.
Guessing the lack of the jump is due to how late in the game the Elite 4/Champion is.

Yeah, Gold Writ adds 20 Levels to all members.

Are there a particular number of Gold Writs you have to send before you upgrade your Battle Mansion for higher-levelled Pokemon? I've sent 2 so far and don't see much of a difference yet --- +5-10 levels or so?

Each writ only works once, doing more than 1 writ overwrites the other.

I've been lucky getting them in the 30's and 40's, but now I'm trying for a shiny dratini so... yeah let's see if that happens.
Quickest I got was 8 with carvahna.

Pokemon BW2 gave a shiny dratini. Actually BW2 had a lot of shinies. Wonder if they kept the same increased shiny chance mechanic where if you breed pokemon from 2 different areas of the world the chance of a shiny increases.

Dat Masuda method. Shiny Pokemon aren't the rarity they used to be.
