This has been bugging me for a long time, but why do they take forever to finish?
I'm seeing Bleach air on Toomani since the passing weeks, episode 270 or so. There's way too many dialogue transitions, and these two guys survived two fucking ultimate attacks. Heck, one of them took two direct nukes and he's still alive.
Then there's Naruto. I remember that it took like at least 10 episodes for Orochimaru to kill the 3rd Hokage, and nearly half of them was just in suspended animation (forbidden jutsu + sword impaled in stomach).
What gives? If they take forever, we'd all get bored so easily!

Dragon Ball Z
also, it's so the manga has more time
Also, to save production cost.

It's a way of artificially prolonging run times and episodes so that the anime does not catch up with and/or overtake the manga. The choice ends up being between prolonged battles/reduced chapter consumption per episode or all the filler arcs you can('t?) stomach. Some series can get away with lowering the amount of chapters used per episode. Bleach, with all of its pointless full-page spreads that have 0 dialogue, is not one of those series.

Its only the big 3 that do that. If you watch a show with only 12-24 episodes they are usually paced nicely.
TTGL, Katanagatari, and Hellsing Ultimate had really good fight scenes.

I beg to differ. Most 12-24 episode series suffer from the opposite problem. 2-3 episodes of premise. 2-3 episodes of resolution. Non-plot-related filler between, with maybe 1-2 more episodes if you're lucky that have any connection to the beginning or end of the series. In that situation, it's not that they don't have enough material and have to stretch out what they do have; they have more than enough material and still would rather fill the middle with inane things that don't go anywhere. There are actually very few series that are nicely paced, period.
Also, Hellsing Ultimate, being an OVA, probably isn't the best example to use when trying to suggest tv-aired anime that are nicely paced. OVAs tend to be more focused in general, and even then there are quite a few that aren't exempt from the "only 20% of this will actually matter" clause.

Anyone remember Slam Dunk's ~10 episodes for the last 3 minutes of a game?
