Honestly, I'd make a highlight reel or something. That would require recording literally everything and cutting out a ton of clips though. It'd be a huge time, space, and editing commitment to do something of that scale though. More effort than it might be worth really. The issue with Vindi is that there is a lot of grinding, doing the same dungeons over and over again. Everyone who has played Vindi does not feel like watching that all over again - so you're going to have issues if you want to do a direct playthrough.
Clip shows that range from 4-7 minutes in length are probably your best bet. I've done my share of stupid uploads, mainly 50+ minute solos. That's nonstop fighting for nearly a hour, but trust me when I say that from the Youtube stats - that other more well known soloers have also given - your viewer retention past like 3-4 minutes plummets hard. Virtually nobody will sit through a whole one hour video. It doesn't matter how funny you are, people will tune out due to life and so forth.
Keeping in boss fights is probably a good rule of thumb. It's why most people still play Vindi after all. Also just funny glitches, really random death, just really random reactions and such, that sort of thing. Trying to keep a progression is good and all, but just remember that Vindi is a pretty slow game and that you're going to run out of relevant things to talk about fast.
Granted that's where Akutare's suggestion of having a friend or two helps. A lot of popular Youtube videos are just clip shows of a bunch of friends doing really silly things. Granted that's not all there is to it, but that type of setup is very common and is probably the best bet if you have to work with relatively uninteresting footage.
2. Should I include my webcam or just do commentary?
I'd just do commentary. Unless your facial reactions are really that funny, a webcam won't do much.
That and it just saves you some trouble. You just know there are going to be those sort of people who will insult you even if there's nothing particularly wrong with your face. Because this is the internet, and especially Youtube, people are inevitably going to be complete jerks.
It's also just way easier to edit without having to overlay videos within videos and sync things up etc.
3. Would any of you be interested in being a part of my playthrough? I would love to have people from the community take part in it and get you guys out there as well!
4. Which Character should I play?
I would highly suggest that you play the character you want to play. As I mentioned above, any video series that aims to go this far is going to require a ton of dedication. It's a lot easier to be dedicated to something if you have fun with it - so play any character you want. I mean don't even aim to be the best or anything right away - there's a lot of entertainment to be had in watching other people mess up as well as succeed.
Not very interested in taking part, mainly as there's not much fun to be had from watching someone with excessive stats just spin everything to death. That and I don't feel like making more alts - I already invest way too much time into my two current ones.
