Im still kinda confused though, what was the guy doing with the stuff, why was he transporting it? Who attacked him (if thats what happened)? And why would they destroy it?

Most likely he was about to sell or trade it off for epik win. Pirates just scanned his ship and saw his amazing goods and jumped him, yet they were unsuccessful in safely retrieving the goods and instead destroyed them by accident most likely.

Or maybe they're epic trolls and thought it'd be funny.
Wouldn't you be way more pissed if some mugger beat you up and burned the $1000 in your wallet instead of running away with it?
If they don't even care about the game, the PLEX would be useless to them unless they could trade it for real cash somehow.

except it's more like a normal looking person in the ghetto with stacks of money inside his pocket and the ghetto had X-ray vision
though I realize that person might've tried putting it on a "weak looking ship" or something to AVOID pirates xD

I played EVE for a while, and I got to say, why the HELL would you even be in Jita with ONE PLEX? I only played a month or so, and knew to avoid Jita 5 like the plague when possible with high value cargo, let alone one of the most high valued item in the game. And why in a frigate too?
Come one, I was quite the noob, and even I would never do something like that. Cant tell who is the bigger idiot though, the guy with the PLEXs or the pirates who destroyed them afterwards XD.
