Yes you will. It might show your character with a different look on the rebirth screen, but dont worry about it, it's just a glitch. Just dont click "changed appearance" and it wont change.

No skills are restricted to specific talents, but there are a few tailoring/blacksmith manuals that require you to be the specific talent. Dont really worry about these too much.

Yes you can change your talent when you rebirth.

After reaching a cumulative level of 300, you can only rebirth for free at age 20, but if you buy character cards, you can use them to rebirth after 6 days.
