Regardless of race, there are few skills that everyone needs to rank earlier on. Windmill is one of them, so you got that out of the way. Another one would be refining. Personally, I don't find refining hard. However, since it does have "fail" as part of the training, having a lower success rate on making ingots would help you, meaning it's best to do at lower dex.
For giants, it'd be something like stomp, taunt, etc, basically your basic str skills. For elves, it'd be crash shot/magnum shot. For humans, this depends on what you want to start out with. I recommend starting out with warrior.
2. You can hang out with others, make money, or just level and get stronger. PvP is also another feature of the game, but I don't really recommend it unless you're derping with your friends. Reason is... well, those who hang around in pvp area tend to be not very skilled players, and tend to be childish. Nothing good you get from it, really.
3. You're asking the wrong question. Rather than what total level, it'd be more like at what stats. I recommend that you get at least a master in something before moving into another one. Depending on a skillset, this level could be anywhere from 100 to 2000, but do note some skillsets are more useful earlier on, while some lag behind later. For example, I usually tell people to not go into puppetry unless they have at least 800-900 str+dex combined. For some, it could be a high standard, and it's just me. Whether you feel strong enough or not in your skillset is completely up to you. For close combat, I'd move onto knight right after masterint close combat, and once you can do 10-12k, you can invest in another talent. I recommend range, but again, up to you.
