I'm in the "Why not both?" camp here.
With a guard cylinder and Savage wand I essentially have everything I need.

Alchemy damage output is primarily limited to Water Cannon, Flame Burst, and Hydra Transmutation. You have other options at your disposal but they hardly compare to those skills. Alchemy has issues due to elemental cylinder specialization. An alchemist using a Hellfire Cylinder essentially deals 50% less damage with other elements, which is unfortunate.
Water Cannon may deal heavy damage but it's fairly slow compared to bolt magic and archery (noting CC activation) and Flame Burst has a lengthy animation with an awkward cone of effect.
Magic has relatively poor support options compared to alchemy but it has a ton of highly damaging skills which cover a diverse area of effect. It's not inherently better than Alchemy; their usefulness is entirely dependent on the situation.

This is mabinogi.
There is no "which is better?" but rather "why not everything at the same time?".
As for which is friendlier to start out with between the two, alchemy probably is, magic isn't for someone who just made a new character.
