You should try revisiting demon's souls. For me it was harder in memory than in actuality. Demon's souls is still my favorite though.

Too many waypoints and too few invasions in NG. Some bosses really need some accustoment though. There are some relatively difficult places like the arena fight in Harvest Valley, but overall mobs are very managable. I had a far harder time with Undead Burg than any DS2 region I've been toyet, which is as far as early Black Gulch and through Shaded Ruins.
I didn't play Demons, so I dunno, but I find DS1 definitely harder than DS2.

The PC version is perfectly fine with controller and definitely superior to console. It is pretty terrible with keyboard and mouse though. They took one step forward and two steps back in that department when compared to the first game.

There are mods to fix the PC controls and the performance problems. DSfix and DSMfix make the game playable without a controller, but it's still recommended.

Dark Souls 2 is not a bad port, and the m/kb controls are better than the first game

That's for Dark Souls 1, not 2.
Dark Souls does not need anything optional so you can get a normal experience.

The mouse controls are better but the key settings are shit. Due to that using jumping attacks and shield breakers is completely random.
Too bad the 360 controller is a load of rubbish too, otherwise I'd have switched to that.
Also today I happened upon two hackers during jolly cooperation. They gave me lots of stuff. I deleted the gear, but kept the silkies and effigies. Now I got three old whips and two chaneller's tridents...
