What's an easy way to turn a WAV or MP3 into MIDI for conversion into MML? I tried Audacity but the button to export as MIDI is grayed out.

I think step one is to learn what is a "MIDI" and what is an "MP3".
They're two completely different formats of sound, and rarely does anything for you when you convert one to the other.
Trust me: I've tried doing the MP3 -> WAV -> MIDI too, using various programs. It doesn't work.

MIDI is basically the sheet music.
It's easy to turn MIDI into WAV/MP3, but the other way around is almost always done by hand, some person recomposing the music manually. You may find some tools that try to do it automatically, but they only work for monophonic recordings (whereas 99.9% of stuff people want an MIDI of is polyphonic).
Find an MIDI or a composer willing to do it.
