Giant Red-Eyed Ornata Spiders and
Giant Queen Hornets drop Diamonds (1 & 3 cm variants) quite often, although it all depends on how capable you are of fighting them.
Not sure if there's any other new way since I last looked into these things.

There's a very very slim chance of getting a diamond while doing metallurgy, I heard. But I don't think that counts as "hunting" xD

CM is just centimeters in regards to the size of the gem. RNG is Random Number Generation, which would just be your chance of actually finding a diamond.
