like what happened during each time period
i didn't realize was stuff happening until AC 3 because i was too focused on the templar assassin plot in the others
also i never played AC 1 or Revelations

I haven't played much of the other Assassin's Creeds so I can't be for sure on it. I do know that Assassin's Creed 4: Black Flag takes place during the golden age of piracy which was a real period of time historically. Assassin's Creed 4 has a really fun Templar vs Assassin plot if you are really into that, should try it sometime.
Especially fun if you enjoy spending hours out on the high seas singing sea shanty's firing at ships and forts and enjoying the beautiful Caribbean scenery.

The ship section is fun, but fighting on enemy ship is boring. Franticly trying to find the guys I am suppose to kill, flags I am suppose to cut while my crews are dying like idiots is not really fun. I enjoy just firing cannon or mortar at them though. If plundering is automatic I would be much happier.

i really like boarding other ships and sword fighting my way across the deck
i haven't found the need to increase my crew mates since ive never lost more then 2-3 even on the larger ships like a man o war though ive only managed to board one of those due to finding a glitched one with almost no health which i took the rest of so i could board it and add it to the fleet

Assassin's Creed is well researched. Every major character you kill is a real person who dies in the exact time AND place they died in recorded history.

Well, they obviously take some liberties with the how and why since the people weren't really killed by Assassins.

what about historical events that lead up to other historical stuff that you then end p playing in the game ?
like in AC 3 with the war and and in AC4 with the ships that get wrecked outside of Havanna that supposedly draw in all the historical pirates to pirate about with ?

Yes, those are based on real events.
